Make It From Scratch: Homemade Granola Bars

We go through a TON of granola bars in this house.  The kids each take one in their lunches and usually us adults do as well.  Now, luckily I can usually get them on sale with a coupon for a pretty good deal but still - I kept wondering to myself, "self, could I make these myself?".  And so I gave it a try.

Homemade Chewy Granola Bars
(makes about 20 granola bars)

4 1/2 C. oats
1 C. flour
1 t. baking soda
1 t. vanilla extract
2/3 C. butter (softened)
1/2 C. honey
1/3 C. packed brown sugar
2 C. chocolate chips

Preheat oven to 325 and grease a 9 x 13 pan.

Combine all ingredients (except chocolate chips) and stir well.  This will take a while to incorporate.  Once it's all mixed together stir in the chocolate chips.

Press the mixture into your greased pan.  Bake for about 18-20 min (mine were done around 19 minutes).  Let them cool a few minutes and then cut into bars.  Let them cool completely in the pan before taking them out.

I wrapped them individually for lunches so we could just grab n go!

Verdict - These were gone within 24 hrs.  Everyone loved them - and all the kids keep suggesting other variations for the next batch.  I think we're going to add some peanut butter!
