So we did. We sowed the seeds directly in the ground around the middle of May. As of this morning this is what they looked like:

12 C. water
3 C. vinegar
2 C. sugar
I heated that on medium heat until the sugar was all dissolved.
After sterilizing the jars and lids, I packed the jars with the beets and then filled them with the pickling solution.
Once the jars were all filled we took them outside to put in the water bath canner. We use the side burner on our outdoor grill for canning because it is just too darn hot to do it inside!
Delicious! I like to think my Grandfather was smiling down on us from heaven today.
