Works for Me Wednesday: Creative use for Zucchini!

We're being blessed with so many zucchini's from the garden - I think we have had more this season so far than we did for the entire season last year!  So, I decided to get creative....and make an "Apple" Crisp.

First you need to peel and de-seed the zucchini's.  This was trickier than I expect - peeled zucchinis are VERY slippery!  Then you need to cut them up to look like apples:

I combined several recipes to make this:

"Apple" Crisp

8 C. Zucchini (I used 2 extra large ones from the garden)
3/4 C. Lemon juice
3/4 C. Sugar
1 tsp. Nutmeg
1 tsp. Cinnamon

Crisp topping:
1 C. flour
3/4 C. sugar
1 egg beaten
2 T. butter - melted

Combine zucchini, lemon juice, sugar and spices in a large stockpot over medium heat.  Cover and let steam for about 10-15 minutes stirring occasionally.

In a separate bowl combine the ingredients for the crisp topping.  Set aside

In a greased baking dish pour the zucchini and it's liquid.  On top sprinkle on the crisp topping. 

Bake at 350 for 40 min or until the topping is crisp and golden brown.

 Yummy!  The kids had no idea it was actually zucchini.  I told them after they ate it and told me how delicious it was.  The only change I will make to it is to double the crisp topping.  We love that contrast with the soft zucchini.

Creative use for zucchini...and it works for us!

  2. Cool, sounds delicious. That's a really smart way to get your kids to eat they're veggies!! Here's a link to my friends recipe using zucchini. It's almost like a zucchini pasta and it's delicious. Next time I will double or triple the recipe.
